In the morning, I touched up on the brochure one last time. I also finished the revisions for the presentation for the HI Network for Florida Healthy Babies and turned it in for revisions for Corey and Patrick. This will be sent to Marie, who is one of the Public Health Communications Manager. I was nervous about it from the beginning, but I knew which credible sources to use, how to word the content appropriately for my target audience, and did everything in terms of meeting the Department of Health’s standards.
Tanisha and I started prepping for the 5-2-1-0 Olympics with Ebonwood kids about two hours early. We decided to make stations for each of the numbers and split the kids up into two teams. They filed in two separate lines, as the leaders assisted. Some kids were new and needed a bit of assistance. We used the 5 to ask questions to the kids about 5 fruits and vegetables a day, such as, ‘What is a fruit or vegetable in a pie?’ and ‘What is a fruit that grows on a tree?’ The 2 was for them to state or mimic an activity they would do instead of screen time. The 1 was for the 5-2-1-0 physical activity spinning wheel, and the 0 was to state a sugary drink. If anyone got them incorrect, they were to be sent to me to use the physical activity dice, but still be able to move onto the next round. The bonus round got animated. I used the physical activity for Tic-Tac-Toe from the Vickery Center to determine the winner for Olympics.

CHEN started the morning with a small meeting about the Back to School Promotion that Corey assigned me to plan. It actually will be a 5-day, twenty or thirty minute event near WIC to promote aspects of 5-2-1-0 and MyPlate. I would be attending three days only. I wanted to focus on physical activity and proper hydration for most days. Two of the days would focus on healthy nutrition. Skye and Kara decided they’d use the air fryer and do popcorn on one day, along with promoting a few brochures about eating well when you don’t have time, eating smart when you go out to eat, and 100 calorie snacks. The second day they promote healthy nutrition, they agreed on doing a ‘fruit sushi’ that consists of whole grain tortilla with low-fat strawberry cream cheese and strawberries along with the same materials to promote. Stephanie, Corey, and I would take three days to do proper hydration and use a few tear away sheets about the physical activity geared towards children, the 1 and 0 brochures from 5-2-1-0 and use the physical activity wheel. We decided that doing a strawberry orange water to promote a different way to drink water might be successful. Tanisha and I planned for Ebonwood by talking about how we would do the 5-2-1-0 Olympics for the kids. The presentation is almost finished and I feel a bit more confident in using the Flesch-Kincaid for revisions.

Much research was conducted today. I used many sources like MyPlate, Women’s Health, CDC, HealthyPeople 2020, Florida Department of Health, and others. Attempting to make an outline as I make sense of the main points for low health literate target audiences is much more challenging than I thought. Main points such as breastfeeding, health equity, and infant mortality are topics I believed I’d be able to simplify in context in a short amount of time, but unfortunately, I am not quite efficient. I tried to use the Flesch-Kincaid proofreading tool on Word for about half an hour to test it out and understand before I completely finish my draft of the PowerPoint. Gathering as much resources as possible on a time crunch was my main focus as I continued to make sense of the content and outline in my own words. I figured I would focus on rewording to the standards of the Flesch-Kincaid would be a later goal prior to submitting my presentation.

I was assigned a Healthy Babies Module for the Faith-Based Health Information (HI) Network. This is the last module that is due for the fiscal year. It will be about infant mortality among black women. The module contains a PowerPoint presentation, flyer, brochure, and short messages. I met up with one of the breastfeeding coordinators in WIC and she gave me great resources and insights for nutrition portion. She also gave me a handful of information about breastfeeding and the expectations, breastfeeding after coming back from maternity leave, and benefits of it for mothers and babies. It gave me the idea to start on the MyPlate portion of the presentation. I decided to use MyPlate nutrition guidelines for the general population of adults, but also specify pregnant women as well. MyPlate had more information on it than I thought. I even included two slides for components on limiting added sugars, and healthy oils. It seems like much information in a module to be done in a week because the research portion is my main focus. I’m sure I will come up with a flowing outline soon. CHEN also went over the Back to School Promotion that is a five day ‘outreach’ at the health department that I would be in charge of. I decided to focus two days on nutrition, so food demos would be the focus those days. And two days of hydration, along with at least one day of physical activity, but tying in proper hydration as well.

As the first day back from Ciclovia, I worked on the 5-2-1-0 toolkit, starting with Kindergarten. I realized the mistakes I made with putting too much emphasis on making the weekly activities match the monthly theme. I was able to speak with Corey about being able to have a weekly theme tied into the major monthly theme, i.e. 5 for eat 5 or more servings of fruits and vegetables for August, etcetera. I also researched information for the toolkit to better the engagements in classrooms between teachers and students. I was able to make an account for interactive learning. I found that Quizizz is great because it is free, multiplayer friendly, and it is Google classroom operated. With a Google account, students and teachers are still able to make it friendly with having a live dashboard and homework options. I created and account and made 5-2-1-0 related quizzes to tie into the program. Right before I left for the day, I was able to read an article for the Sun Safety Agenda.

I experience my first outreach/ health fair today. It was located at Pensacola State College at the main campus. It was different because it was a health fair for employees. Other sponsors that were there included people representing hospitals, health insurance companies, dental hygiene students, sports medicine offices, and even holistic healers and trauma abuse representatives. When I originally got there, I had two big boxes of salad shakers. Stephanie was still setting up and had our table almost set up. We were surprised that we needed to get more things for our table because it didn’t dawn on us that we’d probably need 5-2-1-0 bags to put their stuff in. Our message that day was to spread healthy eating reminders. We handed out 5-2-1-0 bags, along with portion control plates, 5 pens to remind them to eat 5 fruits & vegetables or more a day, salad shakers, Ciclovia flyers, and pamphlets about healthy eating tips when going out to eat, along with a survey for prediabetics and information about signing up for the health department’s free prediabetes prevention program.We explained the portion control plates in relation to MyPlate guidelines. We also stated that the salad shakers could even be a good snack holder for fruit and yogurt, or veggie sticks and dip. I was glad a lot of people had questions about what we offered and we were able to guide them in the right direction. It was a great health fair and I’m glad to have been given the opportunity to mingle with the community.

I was enthusiastic about catching up with Corey to see her input about the second draft. One thing we talked about was making sure I tie everything together to make it connect with 5-2-1-0, Germs, and Summer Safety. She initially wanted me to look over each week’s objectives to make sure the sentence structure agrees with the monthly themes, along with the student challenges. An example that she used was, “Student Challenge: Decrease screen time to at least thirty minutes or more and play outside to connect with family and the outside world, instead of the television screen.” I decided that it was easier for me to connect all four weeks worth of student challenges to form an objective for each month. It helped make the flow of the toolkit easier. Kindergarten through second grades are finished with the monthly objectives so far. Sometimes I forget that this toolkit will be utilized online, so I still need to figure out how to fix the table of contents into hyperlink format.

Good news. I was able to accomplish my second rough draft of the 5-2-1-0 program. Kindergarten through Fifth Grades are about complete with the 5-2-1-0 focus, along with Germs, and Sun Safety. Each week is categorized to fit MyPlate and most months have a national theme tied into it that is nutrition based or something to do with health. I would have to reword the student challenges, research more fun facts, and touch it up before I start on the dialogue or script for the teachers to use. Things are starting to make sense in terms of putting what I’ve learned into an existing program and eventually presenting it. There are several upcoming events I’d like to participate in and hope to see how that also ties in together. I believe in April CHEN will be having a one day, two location event that promotes 5-2-1-0. It would be interesting to see how communities come in and we promote our program and the components within it. If I am not mistaken, I read that last year there were 700+ participants that included parents and children at the event. I am looking forward to hearing feedback on Monday.
